As an experienced chef, he provides a practiced approach to menu engineering for both single- and multi-unit operations. Bill also advises entrepreneurs and ownership groups on concept development, pre-opening support, operational assessments, and expansion strategies, delivering practical solutions that drive measurable results and sustainable growth.   • Throughout Bill’s career, he has served as Chief Executive Officer, Chief Operating Officer, Regional Director, and Vice President of Operations for both independent and multi-unit organizations. His experience spans luxury hospitality, casual dining, quick-service restaurants, franchising, culinary operations, training and development, business development, and organizational leadership. Bill has successfully led growth initiatives, operational turnarounds, brand development projects, and large-scale team-building efforts throughout the hospitality industry. Bill is an experienced operator and successful entrepreneur who has launched his own restaurants and participated in opening more than 100 restaurants from small independent operations to large global brands. A practiced understanding of asset acquisitions and business exits, he offers owners sound advice on both ends of the restaurant lifecycle. Today he is the Founder and CEO of Mellow Brands and Island Hospitality Advisors, where he applies his wide-ranging experience to help hospitality operators achieve operational excellence, sustainable growth, and improved financial performance.

Bill graduated from the University of Minnesota with a degree in Sports Management and Physical Education.

He is also a certified Executive Chef from the British Virgin Islands Culinary School, with several awards including; Top 3 chefs in the Virgin Islands by Gourmet Magazine, Kentucky Restaurant Association Top 30 under 30, Best New Seafood Restaurant in Tampa Bay.

Bill is a member of the Pennsylvania Medical Cannabis Society.
